Chef Gema Sanchez’ new restaurant offers an all-enveloping experience. Walls displaying temporary art exhibits, oriental rugs, antiques and chandeliers on the tables create a cozy, intimate and elegant atmosphere, like the dining room of a stately home. The warmth extends to the restaurant’s more casual venue, the Bistro. At the table, the sea and mountain traditions of Cantabria cuisine come to mind, with selected fish and seafood and extraordinary meats.
